Which pan diameter to choose
24 cm suits one or two people and a quick breakfast, 28 cm a family and larger portions, 30 cm and woks deeper dishes that need stirring. A set (pan plus pots) costs less than buying piece by piece when you are outfitting a kitchen from scratch.
Coating and base
- Non-stick coating lets you fry with minimal oil; use a wooden or silicone spatula, metal scratches it.
- A thick base spreads heat evenly so food does not burn on one side.
- Induction. Check that a magnet sticks to the base, otherwise an induction hob will not detect the pan.
Care
Let the pan cool before washing: cold water on a hot surface warps the base and it no longer sits flat. A dishwasher shortens the life of non-stick coating — hand washing is safer.
Frequently asked questions
Can a pan go in the oven? Only if the handle is oven-safe — it is stated on the packaging. Pans with plastic handles are not.
Why does food stick to a new pan? Usually the pan is too hot or too cold. Heat it on medium and add oil before the food, not after.
